Rationale: high fiber, high protein, easy, make-ahead, gluten free
Serving suggestion: use on salad or over cooked vegetables.
1 cup Classic Hummus (see recipe)
3 Tablespoons fresh lemon juice (1 lemon)
3 Tablespoons fresh lime juice (1 lime)
3 Tablespoons fresh orange juice (1/2 orange)
1 Tablespoon stone-ground mustard
3 soft, pitted dates
1 clove garlic
1/2″ piece of fresh ginger
1/2 cup cashews
1/2 to 3/4 cup water
Place all ingredients except water in a blender and blend until thick and creamy. Add 1/2 cup water and blend again until smooth. Add more water if needed to reach you desired consistency. Refrigerate any unused dressing.
